Born in Saigon, Vietnam, Vietnamese-Chinese Chef Kim Thai started his culinary journey in Vancouver since 1983. He was appointed to the Executive Chef position at a five-star hotel (AAA Five Diamond) in Downtown, Vancouver, in 2002, as he applied his Vietnamese and Chinese heritage into French and Canadian cuisine. As one of the top ranking hotels, this 5-star hotel is the first choice of many VIP guests staying in Vancouver, including many Hollywood celebrities. During their stay, Chef Kim would personally create special menus for them and arrange their dining experience. At the time of the Asia-Pacific Economic Cooperation (APEC) Summit in 1997, President of the People's Republic of China Jiang Zemin stayed at this hotel for 10 days. During the event, Chef Kim planned and executed the catering of Mr. Jiang Zemin, as well as a large delegation of 350 people.
