Pan seared Bacon Wrap Pork Tenderloinserved on Warm Bacon Potato Salad & Tru Natural Pork Jus
Pork Jus
Ingredients
Tru Natural Pork bone 1 lb
Onion 1 cup
Carrot 1/2 cup
Celery 1/2 cup
Garlic 2 clove
Thyme 1 sprig
Bay leaves 2 pieces
Black peppercorn 10 pieces
Tomato Paste 3 tbsp
Cornstarch to taste
Method
1. Chop all the veggies into a big cube.
2. Roast Tru Natural pork bone in the oven at 400°F until brown.
3. Add vegetables on top of Pork bone and spread the tomato paste on it and roast it for another 20 minutes or until golden brown.
4. Pour it into a pressure cooker and add water to just cover all ingredients and cook for one hour.
5. After one hour, strain it and discard the bone and reduce the stock to 1/5 and thicken with cornstarch.
Pork Tenderloin
Ingredients
Tru Natural Tenderloin 1 pork
Bacon 2 slices
Salt to taste
Pepper to taste
Method
1. Season Tru Natural tenderloin with salt and pepper.
2. Wrap the pork tenderloin with bacon.
3. Sous vide for 1 hour at 160°F.
4. Remove from the water bath and searing until golden brown.
Potato Salad
Ingredients
Nugget Potato 8 oz
Chopped Bacon 3 pcs
Mayonnaise 4 tbsp
Chopped green onion 3 tbsp
Minced garlic 2 tbsp
Small diced shallot 2 tbsp
Methods
1. Boil Nugget potato until fully cooked. Remove from water and small dice.
2. Sauté bacon until crispy. Stir in garlic and shallot for 2 minutes.
3. Remove from heat and add potato with mayonnaise and green onion with seasonings.
Honey Glazed Carrot
Ingredients
Rainbow carrot 10 pcs
Honey 2 tbsp
Garlic 1 tbsp
White wine 2 tbsp
Salt to taste
Pepper to taste
Methods
1. Season peeled carrot with salt and pepper until fully cooked.
2. Sauteed garlic in a pan. Pour in Honey and white wine and reduce it to a glazed texture.
3. Tossed in carrot until fully covered.
